Nicolas Rossignol

Pommard & Volnay

Nicolas immediately arouses the desire to discover his wines as the meticulousness and the absolute search for the authenticity of each of his plots is communicative. As is often the case in Burgundy, the creation of the estate stems from a personal vision backed by a family history.  : embodying the 5th generation of winegrowers, he started with 3 hectares in 1997 and created with the Rossignol-Jeanniard estate a large estate of more than 18ha today. In 2016, he began a shift in excellence with a brand new winery: “  In Burgundy, tradition is in the vines and modernity in the winery. Thanks to the space and the modernity of the tools installed, we can express the authenticity of each climate  with precision, from the grape harvest to the bottling ”.
 
Harvest and vinification
Exclusively manual harvest during which Nicolas tastes the berries in order to determine the vinification technique specific to each climate. Each plot is made-to-measure in a part of new barrels, the proportion of which varies according to the personality of each terroir. It is one of the attractions of the domain  : vinify more than 30 different climates in Pommard, Volnay, Aloxe and Savigny.
  2017 vintage
We tasted a dozen vintages in January and the 2017 vintage turns out to be splendid  : even young, the wines are already harmonious. This is the great quality of this vintage. Second quality: it reveals the nuance of each terroir. If Burgundy fascinates enthusiasts from all over the world so much, it is indeed in the capacity of Pinot to embrace so many different expressions from one micro-plot to another.
Pommard or Volnay  ?
Forget the dichotomy, practical but in the process of being outdated, of Pommard "Masculin" and Volnay "Féminin" ... #balancetonpinot.
The nuances of Nicolas' wines are more complex and to navigate among 30 different appellations, we have selected around ten vintages and presented them in great detail. The Volnays and Pommards will evolve for up to 10-15 years while the 1er Crus will take you for 10 to 30 years of aging, if you have the patience.

The new installations have allowed 2015 and 2016s of very high purity, with aerial and saline finishes which reflect a precise and fair interpretation of the different terroirs. Here we get as close as possible to the quintessence of the Côte de Beaune. They are in line with their predecessors, with additional immediate accessibility linked to this vintage.  "
